Soy Allergies
It is not widely
known that soy is one of the most allergenic foods in modern
diets. It is reported in several research
reports to contain at least 30 allergenic proteins. Health
Canada
is
one regulatory authority which takes this risk seriously,
recalls poorly labeled foods, and warns that anaphylactic
shock associated with allergies can result in death. For example
cookies and pork products were involved in two recalls by
the Canadian Food Inspection Agency for containing undeclared
soy in their products.

The huge rise in allergic reactions
to soy is in line with the increasing use of soy products
in processed foods during the 1990s, and
should be regarded as a major public health concern. Read

A letter gained under the Official Information Act in
New
Zealand
highlights the
incidences of allergic reactions to foods between January
1994 and March 1997. While soy protein ranked second
to cows milk in number of reactions, 25% of severe reaction
were related to soy compared to 5% for cows milk. A
